This is a natural coffee, winner of Lamastus Family Private Auction 2023, grown at 1850 meters in Elida Estate by the Lamastus family. It is of the rare and prestigious Geisha variety, considered one of the most valuable cultivars in the world.
The producing area is known as Torre, the first plot planted with the Geisha variety in Elida Estate, facing the Pacific Ocean directly.The region experiences low temperatures reaching 10°C at night and around 22°C during the day, creating an ideal environment for slow coffee maturation and complex flavor development.
Pour-over Recipe:
Recommended to brew after 20 days from roast date

Coffee dose: 18.5 g
Grind size: Medium-coarse
Water temperature: 93°C
Water amount: 275 ml
Total brew time: 2:15
Steps:

Bloom with 40 ml of water, covering all grounds. Wait 40 seconds.

Pour up to 150 ml over all the grounds and wait 10 seconds.

Pour up to 200 ml in gentle circles around the center and wait 10 seconds.

Finish pouring up to 275 ml in the center.
